KATHMANDU, April 25: Tattva Farms is rejuvenating Nepali kitchens with lauch of its flavored jaggery, aiming to uphold tradition and enhance health.

According to a press statement issued by the company, Jaggery, known as Shakhar and Gund in traditional Nepali cuisine, is gradually disappearing from households. Tattva Farms is bringing back this essential ingredient by introducing it in various flavors, preserving its original essence and medicinal benefits.

The statement reads, “Derived from the Arabic term "Shakhar" and referred to as "Gund" in the Terai region of India and Nepal, jaggery holds a significant place in Ayurvedic medicine. It serves multiple purposes as both a food ingredient and a medicinal additive, made by boiling sugarcane juice.”

Tattva Farms offers a diverse range of products, including Original Jaggery Powder, Cinnamon Jaggery Powder, Saffron Jaggery Powder, Masala Tea Jaggery Powder, Turmeric Jaggery Powder, Black Pepper Jaggery Powder, and Ginger Jaggery Powder, catering to various tastes and culinary uses.

The traditional Original Jaggery Powder can be consumed with milk or warm water, with a recommended daily intake of two to three spoons. It's versatile enough to be used in tea, cereals, sweets, porridge, and as a post-meal sweetener. For tea enthusiasts, there's the 'Masala Tea Jaggery Powder.'

Tattva Farms has curated a product lineup suitable for different culinary applications, from morning tea to evening desserts.

Himanshu Tripathi, the founder of Tattva Farms, suggests enjoying jaggery powder in various flavors not only with ghee and curd but also with roti, rice, and as an ingredient in bakery products.

Currently, Tattva Farms products are available at Bhatbhateni Supermarket, Big Mart, Salesberry, and other general grocery stores in Kathmandu Valley, as well as various cities in the east, Pokhara, Bhairahawa, Butwal, and other western cities, as per the statement.

"Jaggery powder is presently offered in two jar sizes of 300 grams and 600 grams," mentioned Tripathi. "The pricing of other flavors varies based on taste," he added.

The company aims to scale up production and reduce prices in the future. The establishment of the industry in Nawalparasi's Pratappur has directly employed about 200 people and benefited sugarcane farmers' families.
